A Lunch Box classic! We take extra firm organic tofu, mix it with diced veggies, and sautee it all together with a healthy dose of nutritional yeast with turmeric, sesame seeds, cumin, and other savory spices. This smoky and rich filling is layered on a giant flour tortilla, topped with diced queso fresco (soft white cheese), shredded cabbage/red onion/cilantro/lime slaw, then wrapped up and toasted in a dry cast iron skillet. Served with traditional Costa Rican black beans and spicy green salsa. Try it with our salsa chile d’arbol to turn up the heat.
